Meet Wayne, an 12-year-old starter that originated in San Fransisco and made its way to Texas. Starter is the heart and soul to sour dough baking. Along with leavening the bread. The starter also brings that classic sour flavor. A starter breathes life into bread. If the loaf is the body, the starter is the soul. As the microbes eat the sugars in the flour, they exhale carbon dioxide, producing the bubbles that turn a flat, dense loaf into something light and fluffy. Sourdough is a healthier alternative to regular white or whole wheat bread. Although it has comparable nutrients, the lower pH levels means it is more digestible and nutritious. The probiotics also help to keep your gut bacteria happy, and it may be less likely to spike blood sugar levels.
Does sourdough starter get more sour as it ages? Yes. A more mature starter will have a better established colony of lactobacillus (the good bacteria that give you the distinctive sourdough flavor). So as your starter matures and ages, it will develop a much stronger sourdough flavor.
